Recipe: Herby Toad in the Hole

STEP 1. Start by heating the oven to 450ºF. Gather flour, eggs, milk, mustard, and some salt and pepper and pour them all into a food processor. Blend until obtaining a smooth mix and leave to rest about 20-30 minutes in a tin.

STEP 2. Chop the onions in little pieces and put them into a little bowl. We will be using them later.

STEP 3. Pour your favorite Australian extra virgin olive oil in a frying pan and spread across the whole pan. Heat your pan and when it reaches peak temperature cook the Cumberland sausages until they are roasted and crispy on all sides. Serve them on a plate once they are fully cooked.

STEP 4. Take the mix you prepared in STEP 1 and place the cooked sausages and onions inside it. Do sprinkle some fresh sage and rosemary leaves onto your dish to add some flavor.

STEP 5. Place the tin in the oven for 30 minutes. Wait until the contents look puffed and brownish. I necessary, keep in the oven and heat for an extra 5-10 minutes.
